Biltong Avocado and Orange Tartare

(Serves 4 as a starter)
Ingredients:
10g packet of IOW Biltong, 2 avocados diced
1 orange segmented, 2 tbsp orange juice squeezed from orange
3 tbsp finely chopped spring onion, 2 tbsp wholegrain mustard,
4 slices of ciabatta spread with IOW Butter, Parsley to garnish.
Method:
For the tartare gently toss the orange, onion, avocado, juice and mustard in bowl cover and chill in fridge for 30 mins.
Lightly spread butter on both sides of the bread and gently fry until golden brown. To serve place tartare on toast, top with biltong and garnish.
