Winter Chanterelle Mushrooms

A wild mushroom similar to the normal Chanterelle but appearing later in the year, hence the name, the Winter Chanterelle has a rich, deep brown colour that can make it hard to spot in the falling leaves of Autumn. Found in damp acid soil - such as boggy pine forests - it has a sweet flavour and tends to be slightly fruity in flavour, often smelling slightly of apricots once dried.
More popular in France, where their foraging skills have not got as rusty as ours in the UK, the Winter Chanterelle is a seasonal treat worth seeking out. Occasionally available in the supermarket, you are more likely to find them in your local farm shop or from a local specialist here on BuyGB! Alternatively you can pick your own, but you should always do your research and make sure you know what you are picking as a mistake can be dangerous!

- Winter Chanterelles are sometimes called Yellow Foot Chanterelle or Funnel Fhanterelle
- If picking your own, make sure you know exactly what you are looking for - if in doubt, check with an expert and discard any mushrooms you are unsure of
- Winter Chanterelle mushrooms can quickly lose their shape and go mushy - try and eat them as fresh as possible, and if storing for a few days wrap in paper towels and store in a ventilater container in the fridge
- Drying can help intensify the flavour
