Wild Garlic

Wild Garlic is commonly known as Ramsoms or Bears Garlic (reputedly because bears eat it on awakening from hibernation to kick start their metabolism and regain their strength!).
Unlike common cultivated garlic, the leaves are eaten rather than the bulbs, although the bulbs can also be eaten. The taste is much more delicate too, more like chives or spring onions than normal garlic. The whole plant can be used – the bulb can be eaten raw or cooked and is available all year round, but is at its best flavour in the spring. As well as adding flavour to stews and soups, wild garlic has traditionally been used in ancient and herbal medicine to settle the stomach and lower blood pressure. The flowers and leaves make a pretty and tasty addition to salads, and the plant is said to repel moles from the garden!
